I love Gale Gand! I used to be so completely obsessed with her sweets cooking show-- so cool that you got to meet her and waffle with her. Congrats! :)

I had a revelation tonight, and think you must proceed full speed ahead to the instant soufflé. The classic whipped egg with enough floury substance mixed in to help it have a little structure works as if by magic, although possibly only in a Belgian waffler: the rising of the egg is enough to lift the upper grid, so that in 3 minutes or so you have 1.5 sides crisply browned, and the forward edge fluffy.
Butter. Freshly ground black pepper. Yum.
Of course, It's so dead simple you may want to fancy it up with some fruit or cheese or something.
